Quick breakfast ideas

Rush rush rush!  While I love having those mornings while I catch up on the morning news while I leisurely cook my bacon and eggs, this week was not filled with that type of morning.  I almost missed the quick slamming of a bowl of cereal (but I don’t miss the almost 73 pounds gone, so I resisted).  There are actually plenty of quick LCHF breakfasts, even of the grab-and-go variety.

  • hard boiled egg… obviously, this requires some advanced prep, but if you have them already in the fridge, you can just eat them.
  • Ham, cheese, and spinach wrap.  You could either use ham as the outside wrap, or use some sort of lettuce leaf as the outside wrap.
  • handful of nuts and berries.  easy to eat while you’re packing your lunch!
  • Want something for the road?  Make yourself a protein shake.  Cup of unsweetened almond milk, 2 T nut butter of your choice, 1 T coconut oil, 1 T chia seeds, and 1 T unsweetened cocoa powder.  You can add a touch of stevia if you want a little sweetness beyond what is in the coconut oil.
  • Last night’s leftovers – heat and eat!

Recipe Round-up: Almond Flour Pancakes

I try to avoid making baked goods because they can bring back carb cravings.  When you’re really “needing” something bready, though, it’s good to have some recipes tucked away.  Put this one in your favorites.  I had these pancakes for breakfast (made with stevia, not honey) and they are delicious!  You can either put sugar free syrup on them, slather with butter, or throw some berries on top with some whipped cream.

Eww, what is this, McDonalds?

Is this supposed to even LOOK appetizing?  This, for those who don’t know, is McDonalds new “healthy” Egg White Delight breakfast sandwich.  Obviously we know that the bread isn’t healthy, and processed cheese isn’t good for you either (although american cheese is still my favorite on burgers), but now they’ve taken the one healthy thing on the sandwich and messed with it!  Most of an egg’s nutrients are in the yolk.  And besides… just looking at this sandwich makes me gag!  I’ll take my whole-egg omelettes any day.

Recipe Round-up: Chia Breakfast Custard

I never got into chia seeds before I went low carb.  They sort of creeped me out… were they gonna taste weird?   Why do they gel up?  What exactly IS a chia?  Hold the Toast won’t answer those questions for you, but it will provide a really delicious breakfast custard recipe!  I had this for breakfast and I’m now ready to take on the day.

(By the way… chia seeds really don’t have a taste, and they gel up because I said so.)

LCHF breakfast ideas

Spring has finally arrived in the Midwest.  I had serious doubts on whether the grass would ever green up, but I did finally hear lawn mowers going yesterday.  I’ve been happily eating warming comfort foods for breakfast, but now want to think of some cold breakfasts to eat to compliment the warmer weather that has arrived.

-Eggs are powerhouses of protein, fat, B12, and a bunch of other stuff, all in one teeny little package.  For those that love hard-boiled eggs, these make a fantastic breakfast, especially in a grab-and-go situation.  A lot of grocery stores sell pre-boiled, pre-peeled eggs these days too.  Look for vegetarian-fed eggs if possible (Eggland’s Best, among other brands), which have better nutritional value.

-Berries and cream, if you watch your carb count and can tolerate berries.  This is one of those decadent “I can’t believe I’m losing weight” breakfasts.  I’ve sat at work before munching on my berries that I have drenched in heavy whipped cream and seen the looks I get.  Enjoy every bite.

–  Walnuts and cheese.  This is another item that you can pack ahead of time and just grab for the drive in.  Walnuts are another nutritional powerhouse, and cheese, well, need I say more.  It’s cheese.  Shake it up with your cheeses.  If you’ve been buying blah cheeses all these years, try some stronger cheeses.  Try some extra sharp cheddar, toss some feta on your salad, grate some FRESH parmesan on your chicken.  But now I’m getting into other meals.
