Recipe Round-Up: Freezing Corn on the Cob

I know that not all low carbers do corn.  We do it only rarely, and only when we can find great non-GMO corn, drenched in pastured butter.  If I can’t verify that Monsanto didn’t touch the corn, pssh, cash isn’t coming out of my pocket.  I did get my hands on a dozen ears of fantastic organic non-GMO corn this weekend at the farmers market (along with eggplant, pastured chicken, onions, lettuce, tomatoes, and some other stuff) and we ate some and I froze some.  It’s important to blanch to the corn to preserve the great nutrition and taste.  If you eat corn, enjoy the link (skipping the sugar in the recipe, obviously) so you can savor that great summer corn all winter long!  If you don’t eat corn, carry on with your day!
