I know that not all low carbers do corn. We do it only rarely, and only when we can find great non-GMO corn, drenched in pastured butter. If I can’t verify that Monsanto didn’t touch the corn, pssh, cash isn’t coming out of my pocket. I did get my hands on a dozen ears of fantastic organic non-GMO corn this weekend at the farmers market (along with eggplant, pastured chicken, onions, lettuce, tomatoes, and some other stuff) and we ate some and I froze some. It’s important to blanch to the corn to preserve the great nutrition and taste.
