We had some thunderstorms peel through tonight, and I had to dig out my George Foreman grill to cook up this chicken recipe. I’d worry about the precious healthy fat pouring away from burgers, but with chicken breasts there is really nothing to drain.
A couple changes I’d make to the recipe: add a tsp of salt, and add some cayenne pepper. If you are like me and you have become more sensitive to sweet, the lime juice was a little overpowering and the salt and cayenne will help counteract that. Spicy mayo goes great with the chicken, and will help up the fat content of this meal!
