Okay, okay, if you actually happen to know what a daikon is, you know it’s a root veggie, and you know that means it isn’t allowed. Except, daikon is actually so low in carbohydrates and so high in fiber that it acts like an above ground veggie. Translation: you can eat them! It behaves in many ways like a potato, so next time you are craving french fries, cook up some daikon fries. I just made some and they are fantastic.
